“On a rainy and cold evening in Florence, we were desperate for a warm place to sit and something warm to eat. By chance, we stumbled on La Bottega. We did not need much more invitation than a shining light and a chef working to entice us to walk in. Since it was still early evening, the restaurant was not open yet, but we were welcomed in if we were happy to have a drink while we waited for it to open. The chef was working on”special pizzas” that were sold by the square. What really impressed me was the way the chef worked with the produce. He told us that he only buys the freshest produce from the market and makes all his pizza dough, which takes a couple of days.

Fafa’s knowledge of pizza dough quickly turned our gathering into a cooking class, where he shared his secrets for perfect dough. Time flew, and before we realized it, it was time to open the restaurant to a stream of customers. Despite seating only about 12 people, the restaurant’s take-out business was booming. They followed a simple menu philosophy: “What you see is what you get,” using only the freshest market ingredients for that evening’s pizza. This experience remains one of my fondest memories from my November 2021 trip. As of August 2023, the restaurant still stands in its original location under the same name, though the menu has evolved. While you might not find an impromptu cooking class, the exquisite food makes this hidden treasure worth discovering.

Our impromptu cooking class at this restaurant greatly inspired us, so we decided to recreate this pizza by the slice/pizza al taglio at home. After finding an authentic Pizza Romano recipe online, we prepared it, and it turned out just as delicious as we had hoped.
